Mazavaroo - Meyer Lemon Finger Lime Kosho Combo

This Mazavaroo — Meyer Lemon Finger Lime Kosho Combo is a fusion between a typical Mauritian chili paste and a Japanese-style condiment. The mazavaroo is a Mauritian chili paste consisting principally of finely ground red or green chilies, salt, oil, and citrus juice or vinegar, with various different add-ins such as garlic and ginger, for example. The homemade mazavaroo I used for this recipe consists of a mixture of red chilies, garlic, salt, vegetable oil, and lemon juice.

The pairing between the mazavaroo and Meyer Lemon Finger Lime Kosho combines the intense heat and spiciness from the red chili paste and the tartness and complex citrus flavours from the kosho, making it an amazing condiment.

This condiment can be used anywhere where you would normally use chili paste. Because of the intense heat of this condiment, a tiny amount is sufficient. It is advisable to use it with the same degree of circumspection as one would use a hot chilli paste.

Instead of the mazavaroo, you can use the chili paste or hot sauce of your choice, whether homemade or store-bought.

Mazavaroo — Meyer Lemon Finger Lime Kosho Combo

Makes 1/2 cup (120 mL)

Ingredients

1/4 cup (60 mL) mazavaroo or chili paste of your choice (homemade or store-bought)

1/4 cup (60 mL) Meyer Lemon Finger Lime Kosho

Method

Mix the ingredients together. Transfer into a small sterilised glass jar with an airtight lid. Store in the refrigerator.

This condiment will keep for weeks in the refrigerator.
