Homemade Dulce de Leche
This is a simple recipe for Homemade Dulce de Leche using condensed milk. Since it requires a lengthy cooking time, I find it more cost-effective to make multiple cans of dulce de leche at a time rather than just one. The resulting dulce de leche keeps well in the unopened cans and can be stored in the pantry for future use. However, if you feel that you need only one can of dulce de leche, you can choose to use only one can of condensed milk.
Homemade Dulce de Leche
Makes 4 cans of dulce de leche

4 cans of condensed milk, labels removed
Method
In a large saucepan, place the cans of condensed milk upright in one layer. Add enough water to submerge the cans by about 5 cm. Under medium heat, bring to a gentle boil. Then, lower the heat and let simmer gently for 4 - 5 hours. Check regularly to ensure that the cans stay submerged. Add more water, as needed.
I usually let this simmer for 4 hours. I then switch off the heat source but I leave the cans in the water bath on the stovetop for a few hours. You can choose to leave it to simmer for a full 5 hours.
Remove the cans from the water bath. Wipe them dry.
Store the cans in a cool, dry place. Do not refrigerate as the cold temperature might cause some crystallisation in the dulce de leche over a period of time.
