Welcome to The Little Katora! I have created this blog to share my love for baking and my interest in food from different cultures around the world.
My blog title is a nod to my home country. The katora (pictured above) is a traditional metal lunchbox here in Mauritius. The katora, called tiffin or dabba in India, originates from the British Raj period in India.
While this blog will feature some Mauritian recipes, it will also encompass food from around the world. This blog is about exploring multicultural cuisine, learning about different recipes and techniques, and implementing them in my home kitchen. Thus, staples which were previously unknown to me - like homemade pomegranate molasses and preserved lemons - now feature regularly in my dishes.
Spurred by my passion for baking (and, more importantly, eating baked goods), I am always on the lookout for new recipes. While trying recipes, I like to be creative and come up with my own variations and flavour combinations. I favour high-quality ingredients, natural sweeteners, unrefined sugars, and natural flavourings.
Setting up this website has been a wonderful learning experience. The entire process, from selecting the website builder to reaching the publication stage, has been enjoyable, challenging, enriching, and rewarding. Evidently, this is a work in progress. I still have a lot to learn about blogging - there is ample room for improvement, especially regarding my photography skills (or lack thereof, presently).
This blog is very important to me. As a private person, it is a momentous (and terrifying) move to put myself out there and publish a blog.
